Whether your  friends pop by without warning, or you forgot that bake sale at school, or perhaps you had a hard day at work and want to eat cookies for dinner (no judgments here) these are the cookies for you.

Easy Chocolate chip Cookies

In under 2 minutes you can have these bad boys in the oven and in about 15 you can be munching them down!

A super easy recipe that would be a great activity for kids this summer

(As egg and milk free meaning it will keep in the fridge longer and you can eat it raw! and its can easily be vegan and gluten free)

In a large bowl combine 160g flour, 110g margarine, 110g caster sugar with a wooden spoon or glorious yellow spatula. (colour optional)

If you are using a bar of your faveourite chocolate, chop up 110g and add it to your dough mi;, alternatively you could use smarties, or chocolate drops.  Add ½ tsp vanilla and combine.

At this point if the mix isn’t coming away from the sides and combining together like a dough ball add ¼ tsp honey at a time until it comes to the consistency of soft cookie dough

Either; roll into ping pong sized balls and place on a baking sheet 1 inch apart, Or; roll all of the dough into a log shape and wrap in grease proof paper and refrigerate for 30 minutes or more to create slice and bake cookies to enjoy anytime day or night!

Bake for 8-15 minutes at 180°c until they are a light golden brown around the edges and use your judgement as to how soft or crunchy you like them – the longer you bake the crisper they get.

Easy Chocolate Chip Cookies


160g / 6oz flour (use half flour half oats for oatmeal raisin)

110g / 4 oz margarine

110g / 4oz caster sugar

110g / 4oz chocolate chips (alternatively the same in raisins or nuts)

½ tsp vanilla

1 ¼ tsp honey

Mix all ingredients together with a little honey at a time until it comes together in a dough.

Roll into balls and cook at 180 for 8-15 minutes depending on how crunchy or soft you like them.

Or roll into a log and wrap in greaseproof paper for slice and bake cookies (can be frozen for up to 1 month)
